Spring Green Radiance Soup

A light, cleansing bowl for clarity, energy, and gentle reset

There is something about spring that asks us to soften, lighten, and begin again.

After the heaviness of winter, the body naturally craves simplicity. Lighter meals. Fresh greens. Warmth that nourishes without weighing us down.

This soup is one I love to return to during seasonal transitions or anytime I feel a little foggy, sluggish, or in need of a reset.

Inspired by Ayurvedic principles, it brings together the tastes that help clear excess and rekindle digestion:
bitter, astringent, and gently pungent.

But more than that… it simply feels good.

Clean. Comforting. Alive.


Spring Green Radiance Soup

Soup Ingredients

  • 1 tbsp ghee or olive oil

  • 1 bunch asparagus, chopped

  • 1 handful watercress or rocket

  • 1 ripe avocado

  • 1 small handful fresh parsley

  • Juice of ½ lemon

  • 1 tsp fresh grated ginger

  • ½ tsp coriander powder

  • Pinch hing (optional)

  • 2 cups hot water

  • Sea salt and black pepper

  1. Optional to serve
    Cooked quinoa, drizzle of olive oil, extra herbs



Directions

In a pot, warm the ghee or olive oil.

Add ginger, coriander, and hing. Let the spices gently release their aroma.

Add the asparagus and cook for a few minutes until just tender.
Then add the greens and allow them to soften lightly.

Transfer everything to a blender.
Add avocado, parsley, lemon juice, and hot water.

Blend until smooth and creamy.

Taste. Adjust salt. Add more lemon if you like brightness.

Serve warm.

To make it your own

This is a base recipe you can adapt intuitively:

  • Add spinach or courgette for extra softness

  • Swap avocado for a drizzle of olive oil if lighter is needed

  • Make it heartier with quinoa or lentils

  • Add fresh herbs like basil or dill for a Mediterranean twist
